About the Author
Peter Garrett, Nikolas Coupland and Angie Williams are all at the Centre for Language and Communication Research, Cardiff University. Peter Garrett is Senior Lecturer, and his main interests are in attitudes, intergroup theory, and persuasive communication. Nikolas Coupland is Professor, with main interests in sociolinguistic variation, style and discourse. Angie Williams is Senior Lecturer. Her main interests are in research methods, intergenerational and relational communication. All three have published widely in the area of language and communication.

Feta Bruschetta

Makes 10 servings
Preparation time: 15 minutes
Baking time: 20 minutes
1/4 cup butter, melted
1/4 cup olive or vegetable oil
10 slices French bread, cut 1" thick
4-oz. pkg. crumbled feta cheese
2-3 garlic cloves, minced
1 Tbsp. fresh basil, or 1 tsp. dried basil
1 large tomato, seeded and chopped
1. Combine butter and oil. Brush on both sides of bread. Place on baking sheet.
2. Bake at 350 degrees for 8-10 minutes, or until lightly browned.
3. Combine feta cheese, garlic, and basil. Sprinkle over toast. Top with tomato.
4. Bake 8-10 minutes longer, or until heated through. Serve warm.
Variation: Mix chopped red pepper into Step 3, along with any other of your favorite herbs.
Blueberry Bread

Makes 1 loaf
Preparation time: 10-15 minutes
Baking time: 1 hour
1 egg
1 cup sugar
2 Tbsp. vegetable oil
2/3 cup orange juice
2 cups flour
11/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. Salt
1 cup fresh or frozen blueberries
1. Place egg in large mixing bowl and beat well.
2. Add sugar, oil, and orange juice, and continue beating till well mixed.
3. In a separate bowl, sift together flour, baking powder, baking soda, and salt. Add to wet ingredients and mix well.
4. Gently stir in blueberries. (If you use frozen blueberries, gently mix them with 1 Tbsp. flour in a separate bowl before adding to batter.)
5. Pour into greased 9"x5" loaf pan.
6. Bake at 350 degrees for 1 hour.
Cheese Biscuits

Makes 12 biscuits
Preparation time: 10-15 minutes
Baking time: 10-15 minutes
2 cups flour
4 tsp. baking powder
2 Tbsp. Sugar
1/4 tsp. Salt
1 cup grated cheese (mozzarella, Parmesan, Monterey Jack, or any other favorite)
1/3 cup vegetable oil
3/4 cup milk
1. In large mixing bowl, mix together flour, baking powder, sugar, salt, and grated cheese.
2. Add oil and milk. Mix well.
3. Turn onto a clean, ungreased surface and knead 8 to 10 times.
4. Pat or roll dough into a rectangle. Cut shapes, using a biscuit cutter.
5. Lay biscuits on a sturdy greased cookie sheet and bake at 375-400 degrees for 10-15 minutes.
Tip: It is not necessary to flour the surface when kneading, as this does not stick to the surface.

1. In a small mixing bowl, combine chili sauce, orange marmalade, cranberry sauce, and allspice. Set aside.
2. In large skillet, brown several breast halves at a time in oil for about 5 minutes on each side. (Be careful not to crowd the skillet or the breasts won't brown as well.) Place browned breasts on a platter until all are finished browning.
3. Return all breasts to skillet. Pour chili-cranberry mixture over chicken. Cover and simmer 8 minutes. Uncover and continue cooking 2 more minutes, or until chicken is cooked and sauce is of desired consistency.
Zucchini Lasagna

Preparation time: 20 minutes
Baking time: 45 minutes
6 cups sliced raw zucchini, unpeeled
1 lb. ground beef
6-oz. can tomato paste
1/2 tsp. dried basil
1/2 tsp. dried oregano
1/2 tsp. Salt
1/4 tsp. garlic powder
1 cup cottage cheese
1 egg, beaten
1/4 cup dry bread crumbs
2 cups shredded cheese (divided)
1. Spread slices of zucchini into a long microwavable-safe dish. Sprinkle with 2 Tbsp. water, cover, and cook on High for 3 ½ minutes. Stir. Cover and return to microwave and cook on High an additional 3½ minutes. Stir. Cover and return to microwave and cook on High 1½ minutes more. Drain zucchini and set aside.
2. Meanwhile, in large stockpot, brown ground beef. Drain off drippings.
3. Add to browned beef in stockpot tomato paste, basil, oregano, salt, garlic powder, cottage cheese, egg, bread crumbs, 1 cup cheese, and cooked zucchini. Stir gently together until well mixed.
4. Spoon mixture into greased 7"x 11" baking dish.
5. Bake uncovered at 350 degrees for 25 minutes.
6. Sprinkle remaining 1 cup cheese over lasagna. Return to oven and continue baking 20 more minutes.
Barbeque Beef Strips

Preparation time: 30 minutes
Cooking time: 35-40 minutes
2 lbs. steak or London broil
2 Tbsp. vegetable oil
1 medium-sized onion, chopped
2 cups ketchup
1/3 cup water
3-4 Tbsp. brown sugar, according to your taste preference
1 Tbsp. prepared mustard
1 Tbsp. Worcestershire sauce
1. Slice steak into strips about 3" long and 1/8" wide.
2. Place oil in large skillet. Add strips of meat and chopped onions. Brown quickly over high heat, stirring so that all sides of beef brown well. Pour off all but 2 Tbsp. drippings.

Wonderful!

If your grandma was a great cook and wrote a cookbook, it would look a little something like this book--great for beginners and advanced cooks alike. It does not tell you how to cook, but gives a full variety of recipes that are easy and scrumptious looking, as well as crowd pleasing.

The layout clean and organized and does not startle the reader with cutesy or bright, hard-to-read fonts. Since this cookbook has recipes collected from different people, it reminds me of Southern women getting together on a Sunday afternoon to swap their treasured meal cards.

Fix-It and Enjoy-It gives recipes for just about everything from Texas caviar to homemade ice cream and breads. My mouth literally watered when I looked at all 675 of these recipes. The only thing I did not like was, there were no pictures.

For the price to eat out at a restaurant, one can have this book jammed pack with meal that will satisfy even picky palates. This book is really a gem among the rocks. Each recipe has an ingredient list that is uncomplicated with easy-to-find ingredients.

Phyllis Pellman Good humors her readers with a personal anecdote. I cannot believe that the author of so many cookbooks, including the great Fix-it and Forget-it series, once did not like or know how to cook!

Every kitchen should have one

This is a wonderful reference, whether you're brand new to cooking or like myself, have been around the kitchen for 50 years. Most all of the recipes use ingredients that you normally have in your cupboards. When I get a new cookbook, I read them like a novel and check the ones I want to try. There's so many checks, I don't know where to start!

This is a great cookbook for the "normal" everyday cook. I have tried 7 receipes and each has been delicious! I have had all the ingredients at home (didn't have to run for something special). I have many cookbooks and this is one of my favorites! Enjoy!

second in the fantasy series for middle readers

Will Stanton is the seventh son of a seventh son -- which means he lives in a crowded, noisy family! As the book opens, Will is excited about his approaching eleventh birthday, but he is also alarmed by strange goings on in the neighborhood -- the birds are acting strangely and none of the family's animals will approach him. Soon Will learns why these things are happening. He is about to be indoctrinated into his rightful position as the last of the Old Ones -- an ancient race that has been protecting the world from the conquest of evil. Now it's Will's turn to shoulder some of the burden and participate in the struggle. That's an awful lot for an 11-year old to take on! But Will is not alone. He meets others who will help him, in particular Merriman, a gruff but kindly mentor figure.
"This night will be bad. And tomorrow will be beyond imagining." Susan Cooper is a gifted writer and she sets a mood of foreboding creepiness right from the beginning. While there is an almost constant aura of menace, there is minimal violence, and Will constantly learns lessons of bravery, honor, and the importance of knowledge and learning. Sort of H. P. Lovecraft meets the Hardy Boys.
I agree with some criticism that there is too little struggle and problem solving involved in actually getting the six signs Will needs to find, but the story is still strong and a worthwhile read for middle readers.

Rich and "Dark"

Susan Cooper has yet to equal "The Dark is Rising," the second book of her classic Dark is Rising Sequence. Independent of the first book "Over Sea Under Stone," this is also darker, more magical, more intense, and one of the most beautifully written fantasy novels in existance.

Will Stanton is an ordinary boy, until his Midwinter eleventh birthday. On that day, he ventures out into a seemingly changed world. There, he encounters a sinister Dark Rider, then a beautiful white horse that leads him to a hidden place, where he finds two of the Old Ones -- the mysterious Lady and Merriman Lyon, one of the stars of the previous book. The Old Ones are immortal, powerful, wise, and it turns out that Will is the last one born.

And as an astonishingly cold winter settles over England, Will is taught some of the ways of the Old Ones, who fight the Dark (forces of evil, like the Dark Rider). He has one of the signs of power, but must get them all: Iron, Bronze, Stone, Wood, Fire and Water. And he must contend with the Dark Rider, his own failings, and a mysterious stranger whose future is inextricably entwined with his...

Susan Cooper is at her peak here. Will Stanton's adventures have a sense of unreal mystery and magic about them, where the slightest actions can have significance, time is easily manipulated, and two kinds of reality intersect. Welsh mythos and legend is interwoven more deeply here, including hints of the Arthurian tilt that was featured more prominently in "Over Sea, Under Stone." At the same time, Cooper accurately displays a more human side of Will, the side that is deeply attached to his family and home.

Her writing also becomes much more detailed here. In her first Dark is Rising novel, Cooper's writing was relatively spare and lacking in detail. Here, she more than makes up for it with intricate details about the halls of the Old Ones, the bustling farmhouse, and the eerie woods where the Walker wanders.

Nowhere to be found is the British-kids-on-holiday atmosphere. It's replaced by an warm atmosphere, and one of shocking, powerful magic. This isn't magic infringing on our world, but rather Will stepping from one to another. Her dialogue is more believable, even the little old lady bleating about the snowstorm; and Will tends to think, act, and talk like an eleven-year-old boy who is aged before his time.

Will himself is an astonishingly three-dimensional character: he flips between being a smart, quiet eleven-year-old to being an Old One, with all the power that suggests. This transition is not one that is handled lightly, as he gradually loses his innocent, boyish outlook and learns more about the battle between evil and good. Merriman Lyon is a more majestic character than in "Over Sea, Under Stone," and the reader gets a saddening view of the sacrifices he's had to make for his battle against the Dark.

Susan Cooper does an astonishing job with "The Dark is Rising," a spellbinding fantasy that secured the Dark is Rising Sequence as a classic. Truly an entrancing, magical novel.

OK---One of my faves!

On the eve of his eleventh birthday, Will Stanton's world began to change, drawing him into a legacy that would change his life--and the story of the long conflict between the Light and Dark for the fate of the world.

For he was the last of the Old Ones, quasi-immortals born to keep the world from domination from the Lords of the Dark. And in his time of learning, from the strangeness of his birthday eve to the worst danger on MidWinter's eve, he set in motion a quest for the six great Signs of the Light that alone could save the world from domination by the last and greatest rising of the Dark.

I adore this series, and this is one of the best written books in it. I'm fascinated by Will's double nature and enjoy characters like Merriman, Hawkins. And I'll never listen to Greensleeves again without thinking a little of the chimes of doors of time, or the hint of Paul playing a very old flute.

Marvelous.

This is a sequel to Over Sea, Under Stone.

About the Author
Considered one of the founding fathers of biomechanics as we know it today, DAVID A. WINTER, PHD, is Distinguished Professor Emeritus in Kinesiology at the University of Waterloo. His many distinctions include Fellow of the Institute of Electrical and Electronics Engineers and the Canadian Society for Biomechanics. He was the first recipient of the Career Investigators Award by the Canadian Society of Biomechanics, the Lifetime Achievement Award by the Gait and Clinical Movement Analysis Society, and the Muybridge Medal by the International Society of Biomechanics. In addition to this text, he is author of three other texts on the biomechanics and electromyography of normal and pathological gait, balance during standing and walking, and signal processing in the movement sciences.

The Bible

We actually refer to this as the bible of biomechanics in our lab. I decided I had to have this book after looking at the third edition and realizing how much applicable information it contained to not only my thesis, but most projects in biomechanics. Very comprehensive book. I do wish it would have a little bit of applied statistics in it, but a man can dream right?

Almost the Last Word on Argument (Note Qualifier)

I'm old (-ish). Well, I was until this week, anyway, when I read in the news that you're not middle-aged until you hit your head on 60. This new rule (clearly made by a Boomer) means I'm young again. Ponce de León can go pound sand (in a swamp -- a tricky business).

All kidding aside -- and despite my newfound youth -- in teaching parlance, I'm still old (-ish). You see, I've read a lot of teacher books by now. And I've been to umpteen professional development seminars where I felt I knew as much as (or, sadly in a few cases, MORE than) the presenter.

So, when I stumble upon a book that teaches me something AND teaches me HOW to teach something, I take notice. TEACHING ARGUMENTS is one of those books. It goes beyond logos, pathos, and ethos (Chapter 6 in this book), taking the teaching of argument to another level (the mezzanine, maybe). It's clearly written. And the ethos of the author is impressive. This young lady (Boomer effect strikes anew) knows her stuff.

True, the book's target audience is high school teachers, but as an 8th-grade teacher, I always look at 9-12 stuff and say two things: "I can modify some of this and outright use some of it as is." Then, a fan of talking, I say a third: "My kids can do this because some Russian dude whose name I constantly misspell -- Vygotsky, maybe? -- says it's heady but not so heady that the handies can't reach it."

Actually, he didn't say that, but I'm not so good at translations, so there.

Back to the book: You can start with the last chapter (I did) because it's all about "Aristotle's Guide for Being a Good Student." Useful in September, it stresses "habits" over "abilities" because good academic habits are the great equalizers. They level the playing field.

Then I reversed to Chapter 1: "Starting with Open-Minded Inquiry" before moving on to Chapter 2's practical "From Comprehension to Critique." Chapters 3, 4, and 5 come in a bundle, as they say of communications these days. They are, in order, "Fostering a Deeper Understanding of Occasion, of Audience, and of Purpose." Then it's the EPL chapter you'd expect first (or maybe I would because that's what I know and teach -- poorly, I now see).

Yes, I could have waited until September to implement some of Fletcher's ideas, but I figure, why rob these great kids of some of the skills before they go off to high school, so I've been using some of the stuff the past week or so -- with good result, too! We read a NY TIMES opinion column by David Brooks and played "the believing game." In a few days, we will revisit the same, only this time we'll be playing "the doubting game." My kids are used to the "one-and-done-as-quickly-as-possible game" when it comes to reading, so this is a nice change. A good habit, thank you.

One mark of a good teacher book is the size of the appendices with all of the handouts and examples. Seeing a long one is like a full stocking on Christmas morning. Unpack it slowly and enjoy! So yes, it's been Christmas In April reading this. (Who says April is the cruelest month? T.S. Eliot can go pound sand with Ponce!)

Meaning? The book has a solid theoretical foundation BUT is loaded with practical ideas. Fletcher doesn't stint when it comes to sharing. Now, if I can only get Jennifer Fletcher to run seminars and barnstorm her way East! It's been a while since I went to PD and actually learned something. Remember, I'm old, but only in an -ISH kind of way.

This may be the best book I've found on teaching argument--and I've read a lot. As a new AP Lang teacher, I was desperate for help. We use The Language of Composition by Shea & Scanlon as our class text, but the argument unit is eh. I relied heavily on Teaching Argument Writing by Hillocks, which is also a great book, but I think more applicable to MS or early HS. Fletcher's book is easy to understand with great practice. Highly recommend!

What they say. After I cleared my envious soul over Jennifer Fletcher being so darn smart, teaching something that I love to teach but infinitely better than I do, AND the fact that she lives and teaches in the most beautiful place on earth in the shadow of John Steinbeck (see...it's horrible, isn't it?), I was able to see through my veil of jealousy and realize, thankfully, that Fletcher lays out the entire scope and sequence for the school year. Thank you, Jennifer Fletcher!! This book is terrific because it not only explains rhetoric and argument, but also provides the reader with practical and interesting classroom approaches for teaching it. I can't wait to put this book to work this upcoming school year.
